Easy Carrot Cake with Pecan Nuts


One of the simplest ways to make a cake, it's yummy, it's inexpensive and it doesn't take long to make (and it doesn't take long to go!) Give it a go and tell me what you think! <3 Hope you love it as much as me and my family do =)

Ingredients:

- 2 cups of wholewheat flour

- 1/2 cup of raw sugar

- 2 tsp baking powder

- 1/2 tsp cinnamon powder

- 100 grams sunflower spread

- 2 tbsp coconut oil

- 1/2 cup soya or oat milk

- 1/2 tsp vanilla extract

- 1 grated carrot

- 1 tsp grated orange peel

- Pecan nuts

Method:

Pre-heat over at 220 degrees


Mix all dry ingredients in a bowl.

In a small pot, melt spread with coconut oil.

Add liquids and milk to dry ingredients, stir for 5 minutes and add grated carrot and orange peel along with crushed pecan nuts to mixture. Continue to stir for a couple more minutes and let it sit in the fridge for approx 15 minutes so that it rises =)


Once you take it out of the fridge, give it another stir and place into any baking tray of your choice :-)



Note: The smaller the tray, the less time it will need to bake.


For small muffin size baking tray, it takes around 25 minutes to be ready.

For cup cakes 10 minutes.

Big size cake tray roughly 30 minutes
